Hungarian Cold Cherry Soup

One bite of this cherry soup and you’ll be hooked.
Ingredients
- 1 lb. fresh or frozen pitted Bing cherries, halved
- 1 1/2 cups sour-cherry juice, such as Knudsen’s
- 2 Tbs. honey
- 1/2 tsp. ground cinnamon
- 1⁄3 cup low-fat sour cream
Preparation
1 Bring cherries, cherry juice, honey, and cinnamon to a boil in medium saucepan. Reduce heat to medium-low, and simmer 5 minutes.
2 Stir 1/2 cup hot cherry juice into sour cream in bowl until smooth. Stir remaining mixture into soup. Season with pinch of salt, if desired, and chill.
