Avocado-Cucumber Dressing with Dill

Avocado and cucumber play off each other when blended in a dressing that’s crisply flavored yet rich in texture. Try with arugula, finely chopped kale, and green onions for a green-on-green starter.
Ingredients
- 1/2 large ripe Hass avocado, chopped
- 1/2 cup chopped peeled and seeded cucumber
- 1 Tbs. minced fresh dill
- 1 Tbs. fresh lemon juice
- 1 tsp. pure maple syrup
Preparation
Place all ingredients in mini food processor or chopper. Add 1/4 cup water, and blend until very smooth. Season with salt and pepper, if desired.
